Research Progress on the Advanced Safety Detecting Technology of Edible Fungi

【摘要】:正It is well known that China is one of the biggest mushroom producing country in the world.Because of the richment in protein,amino acids,vitamins,as well as a variety of physiological active substances,such as polysaccharides,peptides,alkaloids,terpenoids,sterols,glycosides,etc,edible fungi are often used to reduce the blood pressure and cholesterol,also anti-cancer and enhance human immunity,deeply loved by the vast number of consumers.On the other hand,the use and medicinal value of edible fungi get more and more attention with the medicinal value and nutrients having been revealed.However,because of its own characteristics and some aspects of illegal operations in the product deep-processing and circulation,there are some potential security risks(mainly includes pesticide residues,hazardous and toxic heavy metals,formaldehyde,sulfur dioxide,pathogenic micro-organisms,transgenic ingredients,etc.) which get great importance all over the world.The detecting technology of all unsafe factors cover chemical analysis,polarographic analysis,spectral analysis, chromatographic analysis,chromatography-mass spectrometry linked technique,immunoassay technique and polymerase chain reaction(PCR),etc. China is one of the biggest mushroom producing country in the world.In 2002,the total production has reached 8760000 tons and accounts for 65 percent of global production.Its GDP in the country,second only to grain, cotton,fruit,vegetables and was ranked sixth.Edible fungi are rich in protein,amino acids,vitamins,as well as a variety of physiological active substances,such as polysaccharides,peptides,alkaloids,terpenoids,sterols, glycosides,etc.Often used to reduce the blood pressure and cholesterol,also anti-cancer and enhance human immunity,deeply loved by the vast number of consumers.In addition,with the medicinal value and nutrients of edible fungi have been revealed,the use and medicinal value get more attention.However,because of its own characteristics and some aspect of illegal operations in the product deep-processing and circulation,there are some potential security risks(mainly includes pesticide residues,hazardous and toxic heavy metals,formaldehyde, sulfur dioxide,pathogenic micro-organisms,transgenic ingredients,etc) in the mushroom products.Recently,the sanitary indexes(includes heavy metals,formaldehyde and sulfur dioxide) of mushroom products is not ideal,this phenomenon often causes reject,detain,receding the goods,claim,termination of the contract and stop trade exchanges in our country.Mushroom products quality and safety get great importance all over the world,labor power and material resources have been input in the development of correlation detection technology.Therefore, it is imperative to speed up the development of China's independent intellectual property rights of rapid,sensitive and stable detection of food safety technologies and products to retain healthy development of mushroom industry.
